In 2020, our winemaker tasted the Trebbiano and immediately sensed something extraordinary in its raw character. Inspired by its complexity, he was determined to ferment it in oak, but during the chaos of harvest, the only barrel we could find was an unexpected treasure—a half-American, half-French oak barrel, originally crafted for a wine fair. This unique combination of woods imparted bold flavors, adding richness and depth to the wine. The result is a Trebbiano with a strong, vibrant taste that marries the warmth of American oak with the elegance of French oak, creating a structured, yet refined wine. Today, we’ve made this barrel our signature, using it exclusively to bring out the full power and nuance of this exceptional wine.

Donna Silvia, a sparkling tribute to the owner’s wife, is a wine that radiates elegance, class, and beauty—just like its namesake. Crafted from Sangiovese grapes in the heart of Tuscany, it invites you to discover the local terroir through a unique, effervescent perspective. Its antique rosé hue and fine, lingering perlage captivate the eye, while the bouquet offers a sensory journey of wild berries, zesty citrus, and delicate rose petals. Each bottle embodies the grace and character of Donna Silvia herself, making it a true celebration of refined taste and elegance.

Our olive grove extends among the sweet hills of Montepulciano within an area of 4 hectares at an altitude between 350 and 400 meters above the sea level. The olive trees grow on a precious patch of terraced land facing south, giving our olives a great exposure to the Tuscan Sun. In our olive grove we grow 4 different cultivars: Frantoio, Moraiolo, Correggiolo & Leccino. In order to obtain levels of excellence, it is essential to follow very precise methods, both in terms of production as well as in olives transformation. The olives are gathered manually directly from the tree, during the period between the month of October and December 31st of each year. Once picked, olives must be conserved inside rigid containers in cool, ventilated rooms. It’s very important that the pressing takes place within 24 hours of harvest, and within 24 hours of being stored in the press. A cold extraction is very important to increase the organoleptic qualities of our olive oil, helping also to preserve healthy components such as minerals, vitamins and antioxidants. By using the cold extraction method we favor quality over quantity: we obtain a very limited number of bottles but of a certified quality.

Our ICARIO Grappa, made exclusively from Sangiovese grapes, undergoes a meticulous distillation process in small copper steam boilers, which enhances its rich flavor, subtle yet generous aroma, and harmonious, persistent taste. Aged for 36 months in French oak barriques, this long aging process adds layers of complexity and depth. Produced by the world-renowned Berta distillery, synonymous with excellence, this grappa represents the perfect balance of tradition, quality, and elegance that defines ICARIO
